Deconstructed Sushi Salad

This was a fantastic rice salad.

1 C sushi rice
1 1/2 c water

Add the water and rice to a pot and bring to a boil. Reduce heat and simmer for 20 min. until done.

1/4c rice vinegar
2 tbsp sugar
1/4 tsp salt
1 tsp sesame seed
whisk together in a large mixing bowl Add the cooked rice and toss together. Add chopped up cucumber, shredded carrots and finely sliced scallions.

Dressing:
1/4 c rice vinegar
3 tbsp lime juice
2 tbsp wasabi powder
whisk together in a separate bowl

For the kids.. Grilled fish and the rice salad

For me and my hubby .. Grilled shrimp and rice salad sprinkled with the wasabi vinaigrette

YUM!

No More Processed Cereal!!

We gave it up and how liberated I feel! I thought it would be harder. I was worried that the kids would become crabby without the "quick fix" meal but honestly it's the other way around. They are more patient and more enthusiastic when I serve breakfast. Most of their choices they can "dress" themselves, which is much more fun than pouring cereal into a bowl. In addition to a healthier breakfast, other benefits of this decision are:

Saving money not only on the cereal itself but on milk too. There also isn't as much milk dumped down the drain...always a pet peeve of mine!

We have also been eating breakfast together more often. I prepared them hot breakfasts about 4 times a week on average and those days we would eat together. We are now having breakfast together everyday. It's also a longer mealtime, sometimes we sit and chat about our plans for the day and sometimes it's very quiet because it's early and my daughter and I are bigtime daydreamers.

Our breakfast menu consists of:
Pancakes (a regular staple and favorite in my household. I try a variety of grains it's fun to experient with these.)
Steel Cut Oatmeal ( I make a large enough batch to last for a few days )
Homemade Granola (to eat with yogurt and berries or just with milk)
Eggs and Sprouted Wheat Toast
Vans Multi Grain Waffles (couldn't give these up, I need one last quick grab-able item)
