and I would like to say the New Year is what I was waiting for to begin a new entry. But I can't...honestly I haven't really cooked much this past couple of months. Well yes, normal dinner meals but nothing that wow'd me and made me feel the need to help all the mom's out there wow their own family. In fact, I have been in a bit of a slump. I miss fruits and veggies, the market the fresh, satiating meals we all LOVE in the spring and summer time. In fact, since I began eating seasonal, local and organic I really am beginning to understand the limitations to that. While I feel good about my decisions I have to be very creative at dinner time and I am "OK" with Kale and Broccoli and Spinach as our veggie every night.
As far as the holidays, I didn't bake. With 3 kids...not much baking happens unless it's quick breads. Which I found the recipe for THE best blueberry muffins! Not local but organic and frozen, from the Co-op too and that's OK with me...at this point. I will post the recipe soon. Holidays...yes I am blessed..oh so blessed to have a family and in-laws full of awesome cooks. So I felt no need to cook at all, I contributed my help and a dish here and there but everything else was "taken care of". I did bake a ham for the first time EVER! and I baked the sin of all sins...Paula Deens Gorilla bread. I make it once a year and trust me ...that's enough to last until this next Christmas. So I would like to thank my readers..if I still have any at this point, it has been over a month! for being patient with me. I will cook and I will blog...I will find inspiration. I also promise my kids I will supply them with more than Lasagna and soups soon.
